This is a recipe for a much-requested chili I make every year for Wrestlemania. It’s a dish loved by nerds and nerd’s moms alike. Try it out.

Main Event Chili:

1 lb stew beef, cubed
1 lb ground pork
1 lb ground beef
½ lb pork sausage
½ lb serano ham
1 green pepper
1 red pepper
1 yellow pepper
1 jalepeno
2 green chile peppers
½ can chipotle peppers in adobo
5 cloves garlic
2 large tomatos
1 large onion
½ can kidney beans
½ can black beans
½ can pink beans
½ can white beans
6 cups beef broth
½ bar baker’s chocolate, 1/4 melted and 1 tbs shaved
1 tsp cumin
1 tbsp chili powder
1 tbsp paprika
pinch brown sugar
1/4 cup cornmeal
hot pepper sauce to taste
salt and pepper to taste
Start out with the serano ham. It’s kind of like a Spanish pancetta. Fry it over a medium heat with a very little bit of vegetable oil. Once crispy, set the ham aside and brown the vegetables in the tasty, tasty ham fat. Start with the peppers (not the chipotle peppers), then add the onions, then the garlic goes in last. Set the vegetables aside and now brown all the meats. Now you can re-add the onions, jalapeno, garlic, the ham, and add your diced tomatoes. Let the tomatoes cook down for about a minute before pouring in the beef broth, chipotle peppers and the beans. Season to your heart’s content. Bring the delightful concoction to a boil. Lower the heat to medium-low and let simmer for about two hours. Now toss in the remaining vegetables and let cook for another fifteen minutes. Finally, uncover the pot, add the chocolate and let simmer for about a half hour, adding the cornmeal during the last five minutes of cooking.

Serve it over rice, pasta or by itself. Be warned…it’s pretty volatile stuff. As the Klingons would say:  yISop! peSop!!
